A sweet breakfast can be a very sweet way to start your day. It is no longer a secret that sweet treat sometimes can make you feel happier, blueberries for breakfast definitely will give you that sweet beginning, plus they are healthy.
1.Blueberries and Almond Oatmeal – for 4 serving
2 cups of fresh blueberries
1 cup of vanilla flavored almond milk (you can also opt for just plain almond milk)
1 cup of water
1 cup of quick cook oats
¼ cup of slivered roasted almond
Maple syrup or agave nectar for topping (optional)
Pour the almond milk into a medium saucepan and bring to boil. Once boiled, add the quick cook oats and simmer it while keep them well stirred. In about 10 minutes, the almond milk should have been absorbed by the oats and the liquid is reduced.
Cover the saucepan and turn off your stove. Let it rest for a couple of minutes and if the oatmeal seems to be a bit dry, you can pour more almond milk while the oatmeal is still hot and stir it until you reach the expected consistency you would like to have.
Add the fresh blueberries and stir it in your oatmeal gently. This might leave you with a purplish colored oatmeal breakfast. If you don’t like your oatmeal to turn purplish, you can also eat your oatmeal cereal and top the blueberries on the spoon.
For the closure, sprinkle your breakfast with the slivered roasted almond as well as the maple syrup or nectar if you would like to add some more sweetness.
2.Blueberries and Ricotta Pancake
Ingredient – for 18 pancakes
1 cup of all purposed flour
1 ½ tablespoon of sugar
A pinch of salt
1 tea spoon of baking powder
1 cup of ricotta
½ cup of milk (You can use any type of milk based on your preference)
2 lemons, take the juice only
2 eggs beaten
1 table spoon of butter
3 cups of blueberries
In a mixing bowl, add the flour, sugar, salt and baking soda. Mix well. In separated mixing bowl, add the ricotta, milk, lemon juice and eggs. Again, mix them all together.
Add the flour mixture to the ricotta batter and stir everything gently until they all are well mixed. Add 1 cup of the blueberries.
Heat a non-sticky pan that has been sprayed with vegetable oil, pour ¼ cup of the pancake batter onto the pan and cook until the underside of the pancakes are golden before flipping it and cook the other side equally. Repeat the steps with the rest of the batter.
In other saucepan, add blueberry and water and about ¼ cup of sugar. Bring into a medium low heat and wait until it is slightly boiled. Stir in a bit of cornstarch and simmer for 4 minutes while keep stirring. If the sauce gets too thick, you can add a tablespoon of water each time until you reach the desired consistency.
Serve a stack of blueberry pancake topped with the blueberry syrup.

SPINACH BLUEBERRY SALAD
Ingredient – for 1 serving
2 cups of quinoa or any other cooked grains such as wild rice or barley
2 cups of fresh spinach
1 cup of fresh blueberries
1 cup of feta cheese or any other white cheese like gouda or white cheddar
½ cup of dried cranberries
½ cup of fresh blueberries washed clean
½ cup of raisins
½ cup of almonds
¼ cup of basil or cilantro finely cut
Honey Apple Cider Vinegar Vinaigrette
¼ cup of olive oil
¼ cup of honey
¼ cup of apple cider vinegar
2 teaspoon of Dijon mustard
¾ teaspoon of salt (you can add more if you like)
¾ teaspoon of black pepper
In a large bowl, add all salad ingredients toss it.
In a covered glass jar, pour all the ingredients for Honey Apple Cider Vinegar Vinaigrette and shake well. Drizzle some of the dressing to your salad mix and store the left over vinaigrette in the refrigerator for next use within the same week.
Inviting people over for dinner can be pretty stressing for some people who might have the pressure to serve the best meal for their guest. Despite the fact that most food usually tastes better when eaten together with our loved ones, but simple chicken and blueberries recipe for dinner is tasty whether you are having people over or just for a treat for you after a long exhausting day.
Ingredient – for 2 to 4 serving
2 large skinless, boneless chicken breast halves
Salt and pepper to taste
2 tablespoon of flour
1 tablespoon of olive oil
1 chopped shallot
1/3 cup dry white wine
1 cup chicken broth (better freshly made)
2/3 cup of blueberries
A pinch of sugar
1 tablespoon of unsalted butter
Season the chicken with salt and pepper and cover with flour. Shake off the excess four.
In a large skillet drizzle olive oil and put on a medium high heat place chicken and wait until brown on one side and do the same on the other side of the chicken. Leave for about 10 minutes. Once the chicken has nice golden brown color, place the chicken on a plate and cover with foil.
Add 1 chopped shallot to the skillet that was used to cook the chicken. Toss for about 1 minute. Pour the dry white wine and leave for about 2 minutes for nice caramelized liquid. Bring in the chicken broth and leave until boils.
Add the blueberries and add a pinch of sugar. Let it simmer and reduce for about 3 minutes. Once the liquid is reduced remove from heat and stir in the unsalted butter and add salt and pepper.
Arrange the chicken on the plate and top with the sauce.
Please make sure that you only used cleanly washed blueberries for all the recipes. However, only wash the blueberries that you would like to use and store the rest of the blueberries in refrigerator in dry condition to avoid any molds that can grow due to the excessive moist from washing the blueberries.
